Caramelised Spring Onion Dip
Serves 6-8 as a snack
1 tbsp Azalea Grapeseed Oil
300g spring onions (use white and pale green sections only from about 2 bunches), cut into inch long sections
1 tbsp brown sugar
250ml kefir or Greek yoghurt
250g cream cheese
Sea salt and ground white pepper
Crackers, to serve
Heat oil in a large frypan over medium heat. Add spring onions and fry, stirring regularly, for 5-6 mins. Add brown sugar, stir well and continue to fry for a further 3-4 mins until very soft and caramelised. Remove from heat and allow to cool.
Combine cooled caramelised onion, kefir and cream cheese in a small food processor and blitz until smooth. Season to taste. Return to refrigerator for 2 hours to chill.
Serve with crackers.
