Kentucky Fried Calamari
Serves 6-8 as a snack
½ tbsp sea salt flakes
½ tbsp garlic salt
1 tbsp lemon pepper
½ tsp smoked paprika
1 large lemon, rind finely grated
2 tbsp Azalea Grapeseed oil, plus 2L extra to deep fry
600g calamari pieces
200g self-raising flour
Preheat Azalea Grapeseed oil in a large saucepan or deep fryer to 210ºC.
In a large bowl combine all the salts, spices, lemon rind and 2 tbsp Azalea Grapeseed oil. Mix well then add calamari and toss to coat. Allow to sit at room temperature for 30 minutes to marinate.
Place flour into a large bowl and toss marinated calamari in flour to coat, dusting off any excess.
In 3-4 batches, deep fry calamari for 2-3 minutes or until golden. Drain on paper towel before serving hot.
