Grapeseed Lemon Delicious


375ml milk
60g desiccated coconut
90ml Azalea Grapeseed Oil
3 eggs
50g plain flour
100g caster sugar
200g lemon curd (store bought)
Icing sugar, to dust

Preheat oven to 160ºC (150ºC fan).
Combine all ingredients (except icing sugar) in a blender and blitz until smooth.

Divide batter evenly between 6 x 250ml capacity ramekins then place onto a baking tray and bake for 25-30 mins until fluffy and lightly golden on top. 

Remove from oven, dust with icing sugar and serve immediately.
