Pizza Stuffed Capsicums

6 medium-sized red capsicums, tops sliced off and seeds removed
1 x 450g packet pre-cooked brown rice
60g pepperoni
110g pineapple chunks
4 tbsp sliced black olives
100g ham, finely chopped
6 button mushrooms, sliced
1/2 brown onion, finely chopped
3 tbsp tomato paste
3 tbsp tomato sauce
60ml Azalea Grapeseed Oil
2 tsp each dried basil and oregano
1 tsp dried thyme
Sea salt and freshly cracked black pepper
Small handful grated cheese (we used pizza blend)
Basil leaves, to serve



Preheat oven to 200ºC (180ºC fan). Nestle the capsicums into a small, oven-safe dish.


In a large bowl combine remaining ingredients (except cheese) and mix well. Spoon into the capsicums then top with grated cheese and bake for 25-30 mins until the cheese is melted and golden. Serve immediately with basil.
