Smashed Avo & Feta Bagels

300g soft goat’s cheese
2 tbsp Azalea Grapeseed Oil
1 avocado
1 long green chilli (seeds removed)
1 cup peeled and blanched broad bean
1 cup blanched baby peas
Zest of 1 lemon and juice of ½ lemon
Mint and parsley leaves
Bagels to serve



In a food processor combine goat’s cheese, Azalea Grapeseed Oil, avocado, green chilli, broad beans, baby peas, lemon zest and ½ lemon juice.


Add a small handful of the mint and parsley leaves, season then blend until smooth but still a little chunky.


Spread over freshly toasted bagels and sprinkle with crumbled goat cheese or feta.
