Grilled Watermelon Salad
Serves 4-6 as a side
2kg wedge of watermelon, cut into smaller wedges
Azalea Grapeseed Oil, to brush plus 1 tbsp extra for dressing
¼ red onion, thinly sliced
100g Greek feta, crumbled
¼ cup walnuts, lightly toasted
Preheat a BBQ grill to high. Brush watermelon wedges with oil and BBQ 2-3 mins each side until charred.
Arrange watermelon wedges, onion, feta and walnuts on a platter.
Whisk together 2 tbsp Azalea Grapeseed Oil and juice of the lime. Season with sea salt then drizzle over the salad just before serving.
