Rockmelon and Prosciutto Salad with Kiwi Lime Dressing
Serves 4 as a Snack
½ rockmelon, cut into very thin wedges
8 slices prosciutto
1 large fior di latte or buffalo mozzarella, torn
Basil leaves, to serve
Juice of 1 lime
Juice of 1 kiwifruit
¼ cup Azalea grapeseed oil
Sea salt and freshly cracked black pepper
To make dressing, combine all ingredients in a small bowl and whisk until combined.
Arrange rockmelon, prosciutto and cheese on a platter. Drizzle with dressing and scatter with basil leaves to serve.
